Waldorf Salad Recipe
The original Waldorf salad recipe contained only apples, celery and mayonnaise. Created at New York's Waldorf-Astoria Hotel in 1896 not by a chef but by the dining room manager Oscar Tschirky.
The Waldorf salad was an instant success.
Chopped walnuts later became an integral part of the dish. Waldorf salad is usually served on top of a bed of lettuce.
Original Waldorf Salad Recipe
2 medium apples, diced
2 medium stalks celery, chopped
1/3 c. coarsely chopped walnuts
1/2 c. mayonnaise
Lettuce cups
Toss the apples, celery and nuts with mayonnaise. Spoon the salad into lettuce cups and if desired, garnish with maraschino cherries.
Waldorf Salad Supreme: Decrease celery to 1 medium stalk and nuts to 1/4 cup. Stir in 1 can (8 1/4 ounces) pineapple chunks, drained, 1/2 cup miniature marshmallows and 1/3 cup cut up dates.
Jellied Waldorf Salad Recipe
2 envelopes unflavored gelatin
4 c. apple juice or cider
1/4 c. sugar
1/4 c. lemon juice
2 large red Delicious apples
1/2 c. celery, chopped
1/2 c. walnuts, chopped
1/2 c. raisins or chopped dates
Waldorf Salad Dressing:
1/2 c. mayonnaise
2 Tbsp. Sugar
1 Tbsp. lemon juice
1/2 tsp. lemon peel, grated
1/2 tsp. Ginger
Dash of salt
1/2 c. heavy cream, whipped
Soften the gelatin in 1/2 cup apple juice.
Heat 3 1/2 cups apple juice and add the sugar and softened gelatin. Stir until dissolved. Stir in the lemon juice and chill until thick. Fold in the apples, celery, walnuts and raisins and chill until firm.
Make the dressing by blending together the mayonnaise, sugar, lemon juice, lemon peel, ginger and salt. Fold in 1/2 cup heavy cream, whipped. Chill. Serve over Waldorf salad.
Sprinkle with chopped nuts, if desired. My personal favorite is the traditional Waldorf Salad Recipe.
