Vegetarian Chili Recipe
This Vegetarian Chili Recipe is for all my friends that don't eat beef. (I don't have many!) This is really a good dish with several different beans plus carrots and corn. Vegetarian Chili RecipeVegetarian Chili Ingredients1 tablespoon vegetable oil Vegetarian Chili Directions Heat the oil in a large pot over medium heat. Cook and stir the garlic, onion, and carrots in the pot until tender. Mix in the green bell pepper and red bell pepper. Season this mixture with the chili powder. Continue cooking for 5 minutes, or until the peppers are tender. Mix the mushrooms into the pot. Stir in the tomatoes with the liquid, the black beans with the liquid, kidney beans with the liquid, pinto beans with the liquid, and the corn. Season this mixture with the cumin, oregano, basil, and garlic powder. Bring the mixture to a boil and then reduce the heat to medium, cover, and cook 20 minutes, stirring occasionally. Slow Cooker Vegetarian Chili RecipeThis slow cooker recipe can sit in the slow cooker until it's time to serve. It's a great chili that's a real crowd pleaser. Vegetarian Chili Ingredients1 (19 ounce) can black bean soup In a slow cooker, combine the black bean soup, kidney beans, garbanzo beans, baked beans, tomatoes, corn, onion, bell pepper and celery. Season the mixture with garlic, chili powder, parsley, oregano and basil. Cook for at least two hours on High. This Vegetarian Chili Recipe is great as a whole meal or as a mid-afternoon snack.
