Slow Cooker Pot Roast
A Slow Cooker Pot Roast is by far the easiest way to prepare pot roast.
Once you prep the aromatics and veggies and brown the roast you place it in the slow cooker and
forget it until dinner.
Both recipes here are great!
Herbed Slow Cooker Pot Roast Recipe
3 to 4 lb. beef pot roast
2 Tbsp butter or margarine
1 lb can tomatoes
1/2 cup dry red wine (optional)
1/2 cup water
3/4 cup chopped onions
1/2 cup finely chopped carrots
1/2 cup finely chopped celery
1/2 tsp minced garlic
1 1/2 tsp salt
1 tsp oregano
1 tsp basil
1/2 tsp pepper
2 Tbsp butter or margarine, softened
2 Tbsp flour
Brown the beef pot roast in the butter in a frying pan. Place the beef roast in the slow cooker (crock-pot) with the remaining ingredients except the butter and flour. Cover and cook on low for 10 to 12 hours (high 4 1/2 to 5 hours).
If thick gravy is desired remove the beef pot roast from the cooker and turn the heat to high. Add the butter and flour that have been mixed together and cook until thickened, stirring often.
Bavarian Slow Cooker Pot Roast Recipe
3 to 5 lb. Beef pot roast
Flour
Salt and pepper to taste
Ground cumin (a little)
2 Tbsp cooking oil
3/4 cup chopped onion
Sauce:
1 can beer
8 oz. can tomato sauce
2 tsp. ground ginger
1 Tbsp. Cinnamon
1 bay leaf (2 if you like a stronger bay flavor)
1 1/2 tsp. salt (or to taste)
1 1/2 tsp. pepper (or to taste)
Rub beef pot roast with flour, salt and pepper to taste and a little ground cumin. Brown the roast on all sides in cooking oil. Remove beef from the pan and brown the chopped onion in same pan. Put the beef pot roast and the onion in a slow cooker (crock-pot). Combine the sauce ingredients and add to the pot.
Cook on slow 6 to 10 hours, or high 3 to 4 hours.
Hint: Long, slow cooking tends to eliminate the flavor of ground seasonings. You may want to add additional ginger and/or cumin, as well as salt and pepper near the end of the cooking time.
Either of these Slow Cooker Pot Roast Recipes will work with any of the cuts of beef that require braising. My personal favorite at this time is a 7-bone chuck.
