The Best of All The Slow Cooker Beef Stew Recipes
Ingredients
2 pounds beef stew meat, cubed
1/4 cup all purpose flour
3 tablespoons unsalted butter
4 large carrots, peeled and cut in 1 inch pieces
4 stalks celery, cut in inch pieces
1 large yellow onion, coarsely chopped
2 cloves garlic, minced
2 bay leaves
1 tablespoon paprika
1/8 teaspoon powdered cloves
3 cups beef broth
1 cup dry red wine
1 tablespoon Worcestershire sauce
kosher salt and ground black pepper
Directions
Season the beef with the kosher salt and black pepper. Combine the all purpose flour and paprika, then dredge the meat in the seasoned flour.
Heat a large skillet and melt the unsalted butter. Sauté the meat until it is evenly browned. Use a slotted spoon and transfer the meat to the slow cooker.
In the same skillet, sauté the chopped onion and garlic until they are softened. Pour the cup of red wine and scrape up any brown bits clinging to the pan. Pour this over the meat in the slow cooker.
Arrange the carrots and celery over the meat and onion. Whisk together the beef broth with the powdered cloves and Worcestershire sauce and pour over the vegetables. Add the 2 bay leaves.
Cover the pot and cook on low for 8 to 10 hours, until the beef is tender. You can also cook it on high for about 5 hours.
Food For Thought - For a thicker stew, make a paste with 2 tablespoons of cornstarch and 1/4 cup cold water and whisk it into the slow cooker during the last half hour of cooking.
On Your Own - To make this a true one pot meal, add quartered red new potatoes with the celery and carrots, or serve the stew over hot buttered egg noodles.
