This slow cooker beef stew recipe creates a hearty and flavorful dish. This is a one-pot beef stew dinner that is perfect for family as well as special company. This recipe is an overnight sensation - meaning that you can let it simmer all night and into the next day. The meat is tender and moist, and the vegetables are ready to serve along side the beef with a meltingly savory sauce. And if you don't want to cook this stew overnight it will be just as flavorful. Serve it with warm dinner rolls or biscuits to help sop up the creamy gravy. Even though the recipe has potatoes in it, we like to serve the stew over egg noodles - we're doubling the starch, but the gravy is just too good to miss out on hot buttered noodles! Slow Cooker Beef Stew RecipeIngredients3 pounds beef stew meat, cubed Place all the prepared vegetables in the bottom of the slow cooker. Season the stew meat with the kosher salt and black pepper, then arrange it over the vegetables. Whisk together the golden mushroom soup with the dry soup mix, and stir in the beef broth. Pour this mixture over the beef and vegetables, making sure that the liquid come just to the bottom of the meat. Add more broth or water if necessary. Cover the pot and cook on low overnight and into the next day, or cook it 5 hours on high then 4 hours on low. Food For Thought - For something different, change the soup to cream of onion and add 3/4 cup red wine with 1 cup of beef broth. A sprig of fresh rosemary added during the last hour of cooking will give your beef stew a definite Mediterranean character. Good To Know - The nice part about having a slow cooker of beef stew simmering all day is that hungry family and friends can spoon a portion into coffee mugs for a quick lunch or as an after school snack.
