Seafood Salad Recipe

This seafood salad recipe and a grilled rib eye steak make a super surf and turf meal. It's elegant enough for a dinner party or as a cozy dinner for two. Use fresh shrimp and scallops if possible.

For even more elegance use King Crab Legs instead of the frozen snow crab. Cut the legs into big pieces.

Seafood Salad Recipe

Seafood Salad Dressing:

1 cup mayonnaise
1 1/2 Tbsp. Dijon-style mustard
1/4 tsp. dried tarragon leaves
1 Tbsp. red wine vinegar
1 Tbsp. water or milk
Salt and pepper to taste

Seafood Salad:

1 lb. small shrimp, peeled and deveined
1 lb. bay scallops
1 (6 oz.) pkg. frozen snow crabmeat, thawed and flaked
1 c. frozen peas, thawed
1/4 c. sliced green onions or scallions
3 c. shredded raw spinach leaves
1 c. onion and garlic croutons

Put all the dressing ingredients in a blender. Cover and blend until smooth. Set aside.

Boil 4 quarts of salted water. Drop the shrimp in and cook 1 to 2 minutes or until almost tender. Add the scallops and cook until just tender and cooked through. Drain and cool to room temperature.

Cut the shrimp into bite-sized pieces. Toss together the shrimp, scallops, crab, peas, scallions and dressing.

Arrange the spinach on a serving platter and top with the seafood salad and croutons.
