Red Potato Salad Recipe
Each red potato salad recipe here is delicious!
The first features Dijon vinaigrette along with the crunch of celery. If you like beets you will like the second with a mayonnaise dressing.
Red Potato Salad Recipe with Dijon Vinaigrette
2 lb. red potatoes
1 cup sliced celery
1/3 cup sliced scallions
1/3 cup oil
1/4 cup red wine vinegar
2 Tbsp. Dijon mustard
1 tsp. Marjoram
1 clove garlic, minced
Wash and boil the potatoes with the skins until fork tender and then cut them up and chill. Add the sliced celery and the sliced scallions.
Mix the oil, red wine vinegar, Dijon mustard, marjoram and garlic is a screw top jar. Seal the jar tightly and shake vigorously until the items blend.
Toss the dressing mixture with the potatoes and chill well.
Red Potato Salad Recipe With Beets
6 medium red potatoes
1 (16 oz.) can sliced beets
4 carrots
1 medium onion
1/2 green pepper
3 hard boiled eggs
4 Tbsp. Mayonnaise
2 tsp. Vinegar
5 salad olives
Boil red potatoes and the carrots in water until cooked fork tender.
Dice the onions and the green pepper and mix together with the vinegar. Let stand.
Drain the potatoes and the carrots and cut into small pieces.
Add the drained cut-up beets, eggs, olives and the onion, green pepper, vinegar mixture to the potatoes.
Add the mayonnaise and salt to taste. Stir all the ingredients together.
