Recipe For BBQ Brisket

This Recipe For BBQ Brisket is one of those recipes where you really hope there's going to be enough left for leftovers!

This is a true Texas style barbecue beef brisket that gets a little smokier the longer you cook it, and in this case, it's going to take a long time!

This beef brisket gets marinated overnight, so give yourself enough time to let all the flavors seep into the meat. It's probably a good idea to double the recipe for the barbecue sauce, because it's something you definitely don't want to run out of.

Texas Style Recipe For BBQ Brisket

Ingredients

4 pounds lean beef brisket
2 tablespoons liquid smoke
1 tablespoon granulated garlic or garlic powder
1 tablespoon dried onion or onion powder

BBQ Brisket Sauce

2 tablespoons brown sugar
1 cup ketchup
1/2 teaspoon celery salt
2 tablespoons Worcestershire sauce
1 1/2 teaspoons dry mustard
3 tablespoons unsalted butter
1/4 cup red wine vinegar

Directions

Whisk together the 2 tablespoons of liquid smoke with the granulated garlic and dried onion. Pour the mixture over both sides of the beef brisket and rub it in to the meat. Put the brisket into a covered container and let it marinate overnight.

Preheat the oven to 300F.

Whisk together the brown sugar with the ketchup, celery salt, Worcestershire sauce, dry mustard and vinegar. Simmer the mixture in a small saucepan over a low flame, and then add the unsalted butter. Whisk the mixture until the butter is melted, then set aside.

Remove the brisket from the refrigerator and put it in a roasting pan. Pour half the sauce mixture over the meat, cover the pan with aluminum foil and bake for 6 hours. The brisket should be fork tender when ready.

Remove the brisket from the roasting pan and set it on a cutting board, covered with the aluminum foil, for about 15 minutes.

Add the remaining half of the sauce into the roasting pan and whisk it in with the pan juices over a low flame. When the liquids are combined, pour them into a small container and skim the fat off the top.

Cut the brisket into long, thin slices, cutting against the grain, and put them on a heated platter. Pour some of the sauce over the brisket and serve the rest on the side.

Serves 8 to 10

Food For Thought - This brisket make terrific sandwiches, especially for a crowd. Shred the meat as it comes out of the roasting pan and mix it with the BBQ sauce. It will keep warm wrapped in foil, and goes great with sourdough rolls.
