Pressure Cooker Beef Pot Roast
The general rule for cooking beef pot roast is to cook it low and slow.

Quick and Easy Pressure Cooker Beef Pot Roast With Gravy
1 (2 1/2 to 3 lb.) boneless chuck roast
Salt
Pepper
Onion powder
1 envelope onion soup mix
2 1/2 cups water
2 Tbsp cooking oil
3 Tbsp cornstarch
1/4 cups cold water
Place 2 tablespoons of cooking oil in the pressure cooker and heat. Season the beef pot roast with salt, pepper and onion powder. Brown the pot roast on both sides in the hot oil. Add 2 1/2 cups of water and the envelope of onion soup mix.
Place the lid on the pressure cooker and turn the heat up until the control starts rocking. Adjust the heat so that a gentle rocking is obtained and cook for 35 to 40 minutes.
After the pot roast is done remove it from the pot. Mix the cold water and the cornstarch and add it to the liquid in the pot. Cook on low heat until the gravy is at the desired thickness.
Nutmeg, cinnamon and ginger are not spices that are usually associated with beef pot roast. However this Swedish style pressure cooker beef pot roast recipe demonstrates the versatility of pot roast.
Swedish Pressure Cooker Beef Pot Roast Recipe
4 lb. beef pot roast, chuck or brisket
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp ginger
2 tsp salt
1/8 tsp pepper
2 Tbsp cooking oil
2 sliced onions
1 diced clove garlic
1/2 c. brown sugar
1/2 c. red wine or vinegar
4 bay leaves
Combine the nutmeg, cinnamon, ginger, salt and pepper and rub into the beef pot roast. Heat the pressure cooker and add the cooking oil. Brown the beef pot roast well on all sides. Add the onion, garlic, sugar, wine/vinegar and the bay leaves.
Close the cover securely. Place the pressure regulator on the vent pipe and cook 40 minutes with the pressure regulator slowly rocking. Let the pressure drop of its own accord.
