Mini Meatloaf With Vegetables
Mini meatloaf is neat I think. Everybody gets his or her own little meatloaf. The only difference in making a little meatloaf and regular meatloaf is the cooking time. Since the loaves are smaller they cook quickly. Any meatloaf recipe can be made into mini loaves.
Mini Meatloaf With Vegetables Recipe1 1/2 lb. lean ground beef 1/2 tsp. Salt 1 egg 1 (8 oz.) can tomato sauce 1/2 tsp. Italian seasoning 1 (2.8 oz.) can french fried onions 6 small red potatoes, sliced thin 1 (16 oz.) bag frozen Broccoli, corn, red pepper combination, thawed and drained
Combine the ground beef, salt, egg, 1/2 the can of tomato sauce, Italian seasoning and 1/2 the can French fried onions. In a 9 x 13-inch baking dish, form 4 mini loaves. Place the potatoes around the loaves. Bake, covered, at 375 degrees for 35 minutes. Place the vegetables around the loaves and stir to combine with the potatoes. Lightly season with salt and pepper, if desired. Top the mini meat loaves with the remaining tomato sauce. Bake, uncovered, 15 minutes. Top the loaves with the remaining onions and bake uncovered 5 minutes longer. Makes 4 mini meatloaf servings.
