This Mexican White Chili Recipe is a spicy white chicken chili for my friends that are
looking for a change from cooking beef. This spicy white chicken chili recipe includes corn!

Mexican White Chili Recipe
Mexican Chili Ingredients
1 1/2 tablespoons butter
1 cup chopped onion
2 stalks celery, thinly sliced
4 cups cooked, chopped chicken meat
2 (15 ounce) cans navy beans, drained and rinsed
2 (14.5 ounce) cans chicken broth
1 (11 ounce) can white corn, drained
2 (4 ounce) cans chopped green chile peppers
4 teaspoons ground cumin
1/2 teaspoon hot pepper sauce, or to taste
1 cup shredded Monterey Jack cheese
2 tablespoons chopped fresh parsley
Mexican Chili Directions
Melt the butter in a large saucepan over medium heat. Add the onion and the celery and cook
until the onion is translucent.
Add the chicken, navy beans, chicken broth, corn and the green chiles to the pot. Season to
taste with cumin and hot pepper sauce. Cover and simmer gently for 15 to 20 minutes or until
well heated.
Ladle the chili into bowls and garnish with the shredded Monterey Jack cheese and the
chopped parsley. If you like you can also add a dollop of sour cream. Serve with corn tortillas.
Even though this recipe is great just as it is I like things spicier so I kick it up with
