Stuffed Mexican Meatloaf

Mexican Meatloaf

Meatloaf is a really versatile dish. Just a few seasonings and you have a Mexican Meatloaf. This one is stuffed with tortillas, refried beans, salsa and cheddar cheese.

I've included a simple Spanish rice recipe to make a complete meal.

Mexican Meatloaf Recipe

2 pounds lean ground beef
1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
4 (8 inch) flour tortillas
3/4 cup fresh salsa
1/2 cup shredded Cheddar cheese

Preheat oven to 350 degrees F.

In a medium bowl, mix thoroughly the ground beef and taco seasoning and set aside. In a medium saucepan, heat the refried beans over medium low heat until they are completely heated through.

Place the ground beef mixture on a large piece of foil. Press the mixture into an approximately 1 inch thick square shape. Spread the refried beans evenly over the top of the flattened beef. Layer the flour tortillas on top of the refried beans, trimming the edges to fit the square. Layer tortillas with salsa and Cheddar cheese, staying 1/2 to 1 inch away from edges of the square.

Bake in preheated oven 40 to 45 minutes, or until no longer pink in the center. Cut loaf in half to test for doneness, if necessary.

This is an easy Spanish rice recipe that makes a great side dish for the Mexican meatloaf. Add a green salad and you have a complete meal.

Simple Spanish Rice Recipe

1 medium green pepper, chopped
1 small onion, chopped
3 Tbsp. cooking oil
1 cup long grain rice
2 cups canned tomatoes
2 cups water
Salt and pepper to taste

Sauté the green pepper and onion in oil. Add the rice and cook until the rice is golden brown, stirring frequently. Add the tomatoes, water, salt and pepper.

Cover. Reduce the heat to low. Simmer until all the water is absorbed and the rice is fluffy. Makes 6 to 8 servings.
