Tasty Macaroni Salad Recipe

It's nice to have a good Macaroni Salad Recipe in your recipe file.

Macaroni salad can be used instead of potato salad or even as a substitute for a baked potato.

It's extremely easy to make and will last quite a while in the fridge.

Macaroni Salad Recipe

1 lb. box macaroni
12 eggs
1 small onion, chopped
3 to 4 stalks celery, chopped

Dressing:

1 (32 oz.) jar Miracle Whip
1 1/2 Tbsp. Mustard
1 Tbsp. Milk
1 tsp. Vinegar
1 tsp. Sugar

Cook the macaroni and drain.

Cook the eggs until hard-boiled and then peel and slice them into a large bowl. Add the chopped onions and celery. Mix in the cooked macaroni.

Season the mixture with onion powder and celery salt to taste.

Dressing: In a medium saucepan add the Miracle Whip, mustard, vinegar, sugar and milk. Heat through, stirring constantly to prevent sticking.

Cover the salad with the dressing and toss well.

Deluxe Macaroni Salad Recipe

2 c. uncooked macaroni
6 hard-cooked eggs, diced
1 c. diced celery
1 green pepper, diced
1 small onion, diced
2 carrots, shredded
1 c. cooked, drained peas

Cook the macaroni as directed on the package and then drain and rinse under cold water.

Dressing:

1 c. mayonnaise
1/4 c. milk
1 Tbsp. Vinegar
1 tsp. Salt
1/4 tsp. Pepper

Mix the dressing ingredients well and then add all of the other ingredients. Toss together to get dressing on all the salad ingredients.

This is really a tasty Salad Recipe and should serve 6 to 8.
