Italian Style Pot Roast
Italian Style Pot Roast is a basic pot roast with Italian seasons. By varying the seasonings
you can make a pot roast of any ethnicity.
The 3 recipes here demonstrate how versatile pot roast can be.
Each of these recipes uses a different cooking method and features a different cut of beef.
The cooking methods are interchangeable as are the beef cuts.
Italian Style Pot Roast Recipe
1 (3 lb.) beef chuck pot roast, 2-inches thick
1 Tbsp. Worcestershire sauce
1 tsp. instant bouillon granules
1/2 tsp. Sugar
1 clove garlic, minced
1/2 tsp. dried oregano, crushed
3 medium potatoes, peeled and cut 1-inch cubes
3 medium carrots, cut into julienne strips
2 medium onions, quartered
1 (8 oz.) can tomato sauce
1/4 c. flour
1 (4 oz.) can mushrooms, drained
Trim the beef chuck roast of any excess fat.
In a 3 quart casserole stir in the Worcestershire sauce, bouillon, sugar, oregano, garlic, 1/2 cup water, 1/2 teaspoon salt and 1/4 teaspoon pepper.
Add the beef chuck pot roast. Cover and cook on High for 5 minutes or until the liquid boils. Reduce the heat to a simmer and simmer for about 1 1/2 hours.
Add the onion, potatoes, carrots and celery. Cover and cook for another hour or until Italian
Style Pot Roast and the vegetables are tender. Spoon the liquid mixture over pot roast once or
twice during cooking. Serves 8.
Easy Italian Style Pot Roast Recipe
3 lb. beef brisket
1 (8 oz.) bottle Italian salad dressing
Marinate the beef brisket in the dressing overnight in a large (12 x 18-inch) cooking bag.
Preheat your oven to 325 degrees.
Puncture 6 holes in the bag and place it in a 13 x 9 x 2-inch baking pan. Roast at 325 degrees
for 2 hours. Serves 4.
Crock-pot Italian Style Pot Roast Recipe
4 to 6 lb. beef rump roast
4 tsp. olive oil
1/2 pt. red wine
1 large can plum tomatoes
5 cloves garlic
2 large onions
Parsley flakes
2 whole bay leaves
2 tsp. Salt
1 tsp. Pepper
1 tsp. Basil
1/2 tsp. Thyme
Brown the beef rump roast in olive oil. After the rump roast is browned, add all of the other ingredients at one time (sprinkle parsley flakes) and simmer 4 1/2 hours or longer.
The longer it's cooked the more tender the beef is. Make sure the beef is covered during the cooking process.
This recipe will work in an electric frying pan, top of the stove or in the oven. In a crock-pot cook the Italian Style Pot Roast on low 10 to 12 hours (high 5 to 6 hours).
