Ground Beef Casserole Recipe

This Ground Beef Casserole Recipe is made with ground beef and beans. A casserole recipe with ground beef and beans is hard to beat, unless it's topped with bacon like this one.

This is a great picnic casserole that has something for everybody. It's a blend of sweet and savory that will have everyone asking for the recipe.

Lean ground beef and canned beans also make for a quick and easy meal.

I like to use kidney and white beans, but you could easily substitute black and pinto beans if you prefer. Canned pork and beans work well, but you could use chili beans if you like a more southwestern flavor.

Beef And Bean Ground Beef Casserole Recipe

Ingredients

1 can (15 ounces) red kidney beans
1 can (16 ounces) baked beans with pork
1 can (15 ounces) white beans, such as Great Northern
1 pound lean ground beef
3/4 cup brown sugar, packed
1/2 cup ketchup
1 tablespoon dry mustard
2 teaspoons white vinegar
1/2 pound bacon, diced
1 medium onion, chopped
Kosher salt and ground black pepper

Directions

Preheat the oven to 350F.

In a large skillet or Dutch oven, brown the diced bacon until it is crispy. Remove the bacon with a slotted spoon and drain it on paper towels.

Add the chopped onion and ground beef to the bacon fat in the skillet and sauté until the beef is browned and the onions are soft. Drain the fat from the pan, and then season the mixture with kosher salt and black pepper to taste.

Combine the kidney beans, the baked beans with pork and the white beans in a large mixing bowl. Whisk together the brown sugar with the ketchup and the dry mustard, and then add the white vinegar.

Do not drain any of the canned beans. The liquid is necessary for the moisture it adds to the casserole. Add the brown sugar mixture to the beans.

Combine the ground beef with the bean mixture and stir well to thoroughly combine all the ingredients. Pour the beef and beans into a large baking dish and sprinkle with the diced cooked bacon.

Cover the casserole with aluminum foil and bake for 30 to 40 minutes. This casserole can be served hot or at room temperature.

Serves 8 to 10

Food For thought - Go Tex-Mex with this casserole.

Substitute meatless chili beans for the pork and beans, leave out the brown sugar and add 2 tablespoons of chili powder in place of the mustard. Cover the top with shredded cheddar cheese before baking, and then line the edges of the casserole with your favorite tortilla chips.

This makes a great presentation if you are serving a crowd.
