Easy Taco Casserole

An Easy Taco Casserole that truly is easy! This ground beef recipe is not lacking in the flavor department, however. It has a spicy Southwestern blend of flavors that your family will love.

Since it's a one-dish meal cleanup is easy too. Great ground beef recipe!

Easy Taco Casserole

Ingredients

1 pound ground beef
1 cup salsa
1/2 cup mayonnaise or salad dressing
2 teaspoons chili powder
2 cups crushed tortilla chips
1 cup shredded Colby cheese
1 cup shredded Monterey Jack cheese
1 medium tomato, chopped
2 cups shredded lettuce

Directions

In a medium sized saucepan, brown the ground beef and drain. Add the salsa, mayonnaise or salad dressing and the chili powder. Mix well.

In an ungreased 2-qt. baking dish, layer half of the ground beef mixture, crushed tortilla chips and the Colby and Monterey jack cheeses. Repeat the layers a second time.

Bake the taco casserole, uncovered, at 350 degrees F for 20-25 minutes or until it's heated through.

Just before serving, top with the chopped tomato and shredded lettuce.

This is a really easy ground beef recipe and it can be altered to fit your families taste. I like it spicy so I use Rotel tomatoes but you can use diced tomatoes with mild chilies.

Using taco seasoning mix instead of chili powder is something I've also done. I think I prefer the taco seasoning.

You can stretch the original recipe further by adding in a can of kidney or pinto beans.
