Easy Potato Salad Recipe

An easy potato salad recipe belongs in everybody's recipe file.

These potato salad recipes go with just about all beef dishes.

I think potato salad is absolutely essential with grilled hamburgers.

Easy Potato Salad Recipe

6 medium potatoes
1 small onion, chopped
1/4 cup chopped dill pickles
3 boiled eggs, chopped
1/2 cup Miracle Whip
3 Tbsp. Vinegar
1 Tbsp. prepared mustard
Paprika
Salt and pepper

Peel and cube the potatoes.

Cook them in a large kettle with water 1/2-inch over the potatoes. Cook until tender and then drain. Mash the potatoes if desired or you can leave them in cubes.

Add the rest of the ingredients, adding the eggs last. Mix. Sprinkle the top with paprika. Keep refrigerated.

Super Easy Potato Salad Recipe

8 medium potatoes
3 carrots, grated
4 green onions, finely chopped
3 Tbsp. Vinegar
2 Tbsp. Sugar
1 tsp. Salt
pepper to taste
1 1/2 cups mayonnaise (may need to add slightly more when serving)

Peel the potatoes. Cook them in boiling water until tender. Slice into larger than bite-size pieces.

Combine the potatoes, carrots and green onions. Sprinkle on sugar, salt and pepper.

Pour in the vinegar and toss.

Let the mixture stand in the refrigerator at least 15 minutes for the flavors to mingle. Add the mayonnaise and mix well. Refrigerate.
