Easy Ground Beef Casserole
This Easy Ground Beef Casserole is not only easy but also fast and tasty. It's a quick ground beef dinner for mid-week or any time.
The taco seasoning and the salsa give it a Mexican flavor.
You can add to that flavor if you like. A little fresh chopped cilantro and shredded cheese over the top turn this ground beef casserole into something special!
You can also substitute pasta of your choice for the egg noodles.
Ground Beef Casserole - Easy, Fast and Tasty
Ingredients
1 pound ground beef
1 medium onion, chopped
1 stalk celery, chopped
1 tablespoon olive oil
1 can (15 ounces) chili, without meat
1 can (14.5 ounces) peeled and diced tomatoes
1 can (15 ounces) whole kernel corn, drained
1/4 cup salsa
1 package (1 ounce) taco seasoning mix
1 bag (8 ounces) egg noodles, cooked according to package directions.
Kosher salt and ground black pepper
Directions
Preheat the oven to 250F.
Heat the olive oil in a large skillet. Season the ground beef with the kosher salt and black pepper and brown it in the oil. Add the chopped onion and chopped celery and sauté them with the beef until they are soft. Drain the fat.
Add the chili, the diced tomatoes, whole kernel corn, salsa and taco seasoning mix to the cooked egg noodles. Stir all the ingredients well and then combine the noodle mixture with the ground beef and vegetables.
Pour the combined mixture into a medium sized baking dish and bake for about 20 minutes. If you would like to add shredded cheese, sprinkle it over the top of the casserole before baking. Serve with your favorite tortilla chips.

Good To Know - You can make this casserole ahead of time and bake it just before serving. You will need to add about 10 minutes to the baking time because of the cold from the refrigerator. Make sure to wrap the casserole in plastic if you are going to assemble it ahead of time.
The uncooked Easy Ground Beef Casserole will keep fine in the refrigerator overnight.
