Easy Beef Stew Recipe
Not only is this easy beef stew recipe easy but it's also quick. It's all done in the microwave! All of the ingredients are cooked before hand, which makes it a great way to use leftovers.
This recipe is worth planning on making extras the next time you have a beef pot roast dinner.
Easy Beef Stew Recipe
2 Tbsp. beef drippings
1 medium onion, finely chopped
1 bay leaf
1 c. sliced, cooked carrots
1 c. cooked, diced potatoes
1/2 tsp. Salt
1/2 tsp. celery seed
2 c. beef gravy
2 c. cubed, cooked roast beef
Paprika
Heat the beef drippings in an 8-inch square glass-baking dish in your microwave oven until hot (20 to 30 seconds at High). Add the onion to the beef drippings and cook uncovered for 3 minutes on High.
Add the remaining ingredients, except the paprika, to the dish with the onion and mix well.
Cover with waxed paper. Heat in the microwave to serving temperature (about 8 minutes at High) stirring occasionally.
Sprinkle with paprika before serving.
About The Beef
Normally a beef stew should be done with a beef cut that contains a lot of collagen such as the beef chuck or beef round. However since this recipe uses cooked beef any leftover beef will do.
