Crockpot Recipes Ground Beef

When it comes to crockpot recipes ground beef fills the bill. Consider this crockpot recipe that makes a warm and filling sandwich using ground beef and Italian sausage.

The meats simmer with peppers and onions, with just a touch of spicy heat.

The layers of meat and vegetables melt onto each other in a crockpot, and then are lifted out and piled into your favorite sandwich roll.

Use some of the pan juices to pour over the top and sprinkle with some hot pepper flakes. Easy, quick and delicious. Perfect!

Crockpot Recipes Ground Beef and Italian Sausage

Hearty Italian Sandwiches

Ingredients

1 1/2 pounds lean ground beef
1 1/2 pounds spicy bulk Italian sausage
2 large yellow onions, sliced
2 large green bell peppers, seeded and sliced
2 large red bell peppers, seeded and sliced
1 teaspoon crushed red chili flakes
Kosher salt and ground black pepper
8 sandwich rolls - Kaiser, French, sourdough - your choice

Directions

Remove the sausage from its casing and crumble it. Season the ground beef with kosher salt and black pepper. Heat a large skillet and brown the sausage and beef, then drain the pan and transfer the meat to paper towels.

Place a layer of 1/3 of the onions and peppers in the bottom of the crockpot. Season them with kosher salt and pepper. Top with half of the meat mixture, then add another layer of onions and peppers, season them, then add the remaining mixture of beef and sausage. Finish with one more layer of onions and peppers, seasoned with salt and pepper.

Add half of the crushed red chilies to the top layer, then cover the pot and cook on low for 4 to 6 hours until the vegetables are tender.

Split each of the sandwich rolls.

Using a slotted spoon, fill each roll with about 1 cup of the meat and vegetables. Spoon a little of the cooking juices over the top, and finish with a sprinkle of crushed chili flakes, if desired.

Food For Thought - Finish these sandwiches off with some thin slices of mozzarella. You can broil them for just a few seconds to get the cheese bubbly.

Good to Know - These sandwiches are nutritionally better than many others that depend on heavy sauces and cheese for flavor.

To lower the calories even more, use extra lean ground beef from top round or sirloin, and use a turkey or chicken sausage instead of the pork.

And if you do decide to add some cheese on top, use skim or low-fat mozzarella.
