Crockpot Beef Stew Recipes are comfort food for me. Sometimes a simple, homey stew can be just as welcomed as a gourmet meal. Using a crockpot to gently simmer beef and vegetables ensures that the stew will be moist and tender.

This basic stew recipe can be jazzed up quite a bit, so if your preferences run to fresh herbs or fiery spice, customize it to your pleasure. For those not familiar with the thickening properties of tapioca, you will learn something new.

Crockpot Beef Stew Recipes - French Beef Stew
Ingredients
2 pounds beef for stewing, such as chuck roast
3 large russet potatoes, peeled and cut into 1 inch dice
4 large carrots, peeled and cut into 1 inch pieces
2 large yellow onions, sliced
3 stalks celery, cut into 1 inch pieces
2 cloves garlic, minced
1 cup tomato sauce
1 cup tomato juice
1 cup beef broth
1 tablespoon brown sugar
1 tablespoon dried basil
1/3 cup quick-cooking tapioca
kosher salt and ground black pepper
Directions
Season the cubed beef with the kosher salt and black pepper, then transfer it to a crockpot.
Layer the potatoes, carrots, onions and celery on top of the meat.
Whisk together the tomato sauce, tomato juice and beef broth. Stir in the minced garlic, brown sugar and dried basil. Pour the liquid over the meat and vegetables.
Cover the pot and cook on low for 8 to 10 hours, until the meat and vegetables are tender.
Good To Know - The tapioca with thicken the juices as the stew cooks, so there's no need to mix it with water or to add it later in the cooking time. If you aren't able to find tapioca, you can thicken the stew by making a paste of 2 tablespoons cornstarch and 1/4 cup water. Whisk the paste into the stew during the last 30 minutes of cooking.
Food For Thought - If you're not in love with all the tomato in this stew, you can eliminate it altogether and make a
mushroom gravy base with 1 can of condensed cream of mushroom soup, 1 can of beef broth and 1 cup dry red wine. Follow the
same directions for Crockpot beef stew recipes as noted above.
