Crock Pot Roast Beef Recipes - Beef Roast Slow Cooker Style

My family and friends love it when I make this very easy beef roast slow cooker style.
It's a slow cooker pot roast that makes its own gravy! Talk about tender and juicy, Oh my goodness!

I like to serve slow cooker pot roast with mashed potatoes topped with lots of delicious gravy and steamed Brussels sprouts along with crusty rustic bread. Any cut of roast beef is fine with me and will work in this recipe.
Because of its ease of preparation and its juicy tenderness this could easily be my favorite of all my Crock Pot Roast Beef Recipes.
Delicious Beef Roast Slow Cooker Style
Ingredients
2 pounds boneless beef roast
1 teaspoon vegetable oil
salt and pepper to taste
1 onion, quartered
16 baby carrots
1 (10.75 ounce) can condensed cream of mushroom soup
4 cloves garlic, minced
2 tablespoons chopped fresh parsley
Directions
In a large skillet over medium high heat, sauté the beef roast in the oil for 15 minutes, or until all sides are well browned. Season with salt and pepper to taste and set aside.
Deglaze the browning pan with a little water or wine.
Place the quartered onion, baby carrots, minced garlic and chopped fresh parsley in the bottom of a slow cooker. Place the roast on top of the vegetables and pour the condensed cream of mushroom soup and the deglazing liquid over the roast and the vegetables.
Cover the slow cooker and cook on low setting for 8 to 10 hours, stirring once.
Transfer the pot roast to a serving platter and place the vegetables around it. Pour the roast gravy from the slow cooker into a gravy boat.
Good To Know: You should use a Crock Pot that's ideal for the size meal you're cooking. This two pound roast should be cooked in smaller slow cooker like the Rival Smart Pot.
On Your Own: Crock Pot Roast Beef Recipes are extremely versatile. Instead of mashed potatoes with this slow cooker pot roast you can add whole potatoes to the slow cooker along with the beef roast.
Campbell's roasted garlic cream of mushroom soup in place of plain mushroom soup will add a little extra flavor. A few dashes of Worcestershire sauce will also spark up the flavor.
