Corned Beef Hash
Corned beef hash is a great dish for making with leftover corned beef.
It's a meal in itself but I especially like it with eggs, toast and coffee for breakfast.
Corned Beef Hash Recipe
2 to 3 tablespoons butter
2 cups finely chopped cooked corned beef
3 cups chopped cooked potatoes
2 tablespoons minced onion
2 tablespoons chopped parsley, optional
Salt, pepper and brown gravy
Melt the butter in a large skillet over medium-low heat. Add the minced onions and let them
cook slowly for 2 or 3 minutes.
Add chopped cooked corned beef and the chopped cooked potatoes. Spread the mixture evenly in
the skillet and mash down slightly with a spatula. Allow the mixture to brown on one side and
then turn with the spatula and brown the other side. Continue turning until most of the meat
and potatoes are well browned.
Alternately you can make corned beef patties with the mixture for individual servings.
In this case turn the patties carefully to keep from breaking them up. Brown the patties well
on both sides.
Drain off any excess fat and moisten with 3 or 4 tablespoons of brown gravy or beef gravy.
Sprinkle with salt and pepper, to taste. Garnish with parsley, if desired.
Corned beef hash was probably a dish that was designed specifically to use up
leftovers. However it's a good enough dish that it's worth cooking corned beef just for making hash.
