A Great Cold Pasta Salad Recipe
This cold pasta salad recipe might look a little complicated but it's really easy and can be made a day ahead of time. It would be a good accompaniment as a side dish to any beef entrée but it's really great with hamburgers cooked on the grill.
Cold Pasta Salad Recipe7 oz. tortellini (or spiral) 1 large jar marinated artichoke hearts 1 large can mushrooms, stems and pieces 1/2 basket cherry tomatoes, halved 1/2 lb. broccoli flowerets 1 large can medium size pitted black olives Small bottle Bersteins dressing 1/2 tsp. lemon pepper seasoning 1/8 tsp. garlic powder Parmesan cheese
Following the package directions and cook the tortellini in a large kettle of well salted boiling water with a little olive oil added to it until tender and done. Drain and rinse the tortellini with cold water. Drain again. Turn into a glass bowl. Combine the drained artichoke hearts (save the liquid), mushrooms, tomatoes, olives and broccoli. Add the mixture to the pasta. To the marinade in the artichoke heart jar, add the dressing to fill the jar. Cover and shake. Pour the dressing over the salad. Add the pepper and the garlic powder. Cover and refrigerate. Add Parmesan cheese to the salad at serving time. This Pasta Salad Recipe will serve 8 to 10 people as a side dish.
