Cocktail Meatballs
These tasty Cocktail meatballs will disappear from your party in a hurry.
They can be simmered in a slow cooker and then kept warm in the cooker until they're all gone.
You can also do the cooking on top of the stove in a pot and then serve them in a chaffing dish.
Tasty Cocktail Meatballs
Meatball Ingredients
1 pound lean ground beef
1 egg
1/4 cup catsup
1/2 cup breadcrumbs
3 tablespoons minced onion
1 teaspoon soy sauce
Sauce Ingredients
1 (8 ounce) can jellied cranberry sauce
3/4 cup chili sauce
1 tablespoon brown sugar
1 1/2 teaspoons lemon juice
Directions
Preheat your oven to 350 degrees F.
In a large bowl, mix together the ground beef, egg, catsup, breadcrumbs, minced onion and soy
sauce. Roll the mixture with wet hands into small meatballs.
Place the meatballs on a broiler pan and bake in the preheated oven for 20 to 25 minutes, turning
once.
In a slow cooker or large saucepan over low heat, blend the cranberry sauce, chili sauce, brown
sugar, and lemon juice. Add the meatballs, and simmer for 1 hour before serving.
Make Ahead Tip:
You can make up the meatballs 2 days prior to the party date and refrigerate. The day of the
party make up the sauce and about 2 hours prior to the party add the meatballs and simmer.
You can also make a double batch and freeze half for a future party.
The cranberry sauce makes these cocktail meatballs stand out from the average
