Chicken Chili Recipe

A chicken chili recipe on a beef cooking site? Well I do have friends that like chili but prefer it sometimes without the red meat. The second version is a slow cooker chili recipe.

"I have a lot of chicken breast recipes but chicken chili is a favorite."

Chicken Chili Recipe

This chicken breast recipe only calls for a pinch of red chili pepper flakes. If you like spicy chili add more. I personally add a whole tablespoon of chili pepper flakes.

Ingredients

3 tablespoons vegetable oil
2 cloves garlic, minced
1 green bell pepper, chopped
1 onion, chopped
1 stalk celery, sliced
1/4 pound mushrooms, chopped
1 pound skinless, boneless chicken breast halves
1 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon cocoa powder
1/4 teaspoon salt
1 pinch crushed red chili pepper flakes
1 pinch ground black pepper
1 (14.5 ounce) can whole peeled tomatoes with juice
1 (19 ounce) can kidney beans, drained and rinsed

Directions

Cut the chicken breast halves into bite size pieces

In a large skillet heat 2 tablespoons of the oil over medium heat. Sauté the garlic, bell pepper, onion, celery and mushrooms for 5 minutes. Set aside.

Add the remaining 1 tablespoon of oil to the skillet and brown the chicken over high heat until it is golden brown and firm on the outside. Return the vegetable mixture to the skillet.

Add the chili powder, cumin, oregano, paprika, cocoa powder, salt, hot pepper flakes and ground black pepper to the skillet. Stir for a few minutes to prevent burning. Add the tomatoes and beans, bring all to a boil and reduce the heat to low. Cover the skillet and simmer for 15 minutes, then remove cover and simmer for 15 more minutes.

Slow Cooker Chicken Chili

This is an easy slow cooker meal and another great chicken breast recipe.

Ingredients

4 skinless, boneless chicken breast halves
1 (16 ounce) jar salsa
2 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon chili powder
Salt to taste
Ground black pepper to taste
1 (11 ounce) can Mexican-style corn
1 (15 ounce) can pinto beans

Directions

Place the chicken and the salsa in the slow cooker the night before you want to eat this chili. Season the mixture with garlic powder, cumin, chili powder, salt, and pepper. Cook 6 to 8 hours on Low setting.

About 3 to 4 hours before you want to eat, shred the chicken with 2 forks. Return the meat to the pot, and continue cooking.

Stir the corn and the pinto beans into the slow cooker. Simmer until ready to serve.

This chili recipe can also be served as a filling for tacos!

Each chicken chili recipe here is great as is. But you can season them up as you like. For extra kick I like to add red chili pepper flakes even if it's not called for. Add these chicken breast recipes to your file.
