Broccoli Salad Recipe
Broccoli is a super veggie and this Broccoli Salad Recipe uses it in its raw form. Since it's raw all the natural vitamins and antioxidants remain intact because they are not leached out in cooking.
This first one gets it's crunch from water chestnuts and the olives add their great tangy flavor.
Broccoli Salad Recipe
1 can whole mushrooms
1 large bunch fresh broccoli
1 can chopped water chestnuts
1/2 c. stuffed green olives, sliced
1 small onion
1 stalk celery
Broccoli Salad Dressing:
3/4 c. mayonnaise
1 tsp. Sugar
1 Tbsp. lemon juice
1 tsp. Salt
Chop the broccoli into bite-size pieces. Slice the 1/2 cup of stuffed green olives. Chop the onion and celery into very fine dice. Mix all the ingredients together.
Mix the dressing ingredients and fold into the broccoli salad until it's all is covered with dressing.
Chill and serve.
This salad has an interesting combination. The raisins and grapes add a little sweetness. The bacon, celery and almonds add great taste and some crunch.
Broccoli Salad Recipe
1/2 lb. bacon, crisped and crumbled
1 bunch broccoli, chopped
1 c. raisins
1 1/2 c. green grapes
Green onions, chopped to taste
1 1/2 c. chopped celery
1 (2 or 3 oz.) pkg. Slivered almonds
Broccoli Salad Dressing:
1 c. mayonnaise
1 Tbsp. Vinegar
1/3 c. sugar
Toss all the salad ingredients together until they are well mixed. Combine all the dressing ingredients and combine with the broccoli salad.
Each Broccoli Salad Recipe here will serve 6 to 8 as a side dish to a beef entrée.
