Brisket Crock Pot Recipe

Ingredients

4 pounds beef brisket - do not trim the fat
1/2 cup dark brown sugar
2 teaspoons chili powder
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 large yellow onion, chopped
4 large cloves garlic, minced
1 cup beer - dark or light, your favorite
1 cup ketchup
1/2 cup cider vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon liquid smoke
2 tablespoons cornstarch
1/4 cup cold water
16 hamburger buns or sandwich rolls

Directions

Combine the brown sugar, chili powder, kosher salt, black pepper, paprika and oregano. Rub this mixture all over the brisket, covering every surface. Wrap it in plastic and refrigerate it for 20 to 30 minutes.

Whisk together the beer, ketchup, vinegar, worcestershire sauce and the liquid smoke.

Put the chopped onion and minced garlic in the bottom of the crock pot. Lay the seasoned meat on top and pour the sauce over the meat.

Cover the crock pot and cook on low for 10 to 12 hours, or until the meat shreds easily.

Remove the meat from the pot. Pour the sauce out of the crock pot into a medium saucepan. Mix the cornstarch with the cold water. Bring the saucepan to a low boil and whisk in the cornstarch. Whisk the sauce constantly until it thickens.

Use a hand-held immersion blender to puree the sauce, or process it in batches in a blender. When the sauce is smooth, return it to the crockpot.

Shred the meat with 2 forks, or if it is cool enough with your hands. Put the shredded meat in the crock pot with the sauce and stir it well so that the sauce and meat are well combined. Heat the mixture until hot, then pile on the hamburger buns or sandwich rolls.

Food For Thought - You can make this recipe smokier if you omit the ketchup and use 1 cup smoky BBQ sauce and 2 tablespoons liquid smoke. Just be aware that your house may small like a Texas barbecue pit!

Good To Know - If beer is not an option for you, substitute 1 cup of beef broth.

The beer does have a tenderizing aspect to it - it's not added just for its flavor. You can add a cup of other carbonated beverage such as coke or 7-up and achieve much the same result.
