Potato salad is great with grilled hamburgers or even a thick juicy rib eye steak instead of a baked potato.

The Best Potato Salad Recipe in the world

6 large potatoes
2 bouillon cubes
3/4 c. boiling water
3/8 c. vinegar
3/8 c. salad oil
1/2 large onion
1/2 c. mayonnaise-type salad dressing
1/2 c. cottage cheese

Boil the potatoes until they are done. Drain the water and dry the potatoes over low heat for a few minutes.

Dissolve the bouillon cubes in 3/4 cup of boiling water.

While the potatoes are hot, peel 2 potatoes and slice into a large bowl. Pour over these slices some of the vinegar-oil mixture. Sprinkle with salt and pepper.

Repeat twice more. (You may not need all the liquid.)

Stir the entire mixture slightly and chill overnight.

Cut up the onion and liquefy in a blender or processor. Add salad dressing and cottage cheese and blend all together.

Combine the dressing mixture with the potato mixture.

Chill a minimum of 2 or 3 hours to blend flavors. Overnight is even better.
