Beef Stew Crockpot

This Beef Stew Crockpot Recipe has the flavors of India permeating the gently simmering beef.

A generous measure of curry powder melds with onions and garlic, and a spicy pinch of heat comes from fresh jalapeno peppers.

Any of these components can be kicked up a notch, depending on your preferences, but if this is your family's introduction to curried beef, it's best to keep everything balanced.

Steamed basmati or jasmine rice is the natural accompaniment to beef curry, and you can carry the Indian theme further by garnishing your rice with toasted almond slivers and a sprinkling of softened raisins.

Spicy Beef Stew Crockpot Curry

Ingredients

2 pounds beef stew meat, cubed
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 large jalapeno pepper, seeded and diced
1 can (14.5 ounces) diced tomatoes with green peppers
1 large yellow onion, cut in large chunks
1 tablespoon curry powder
1 cup beef broth
2 tablespoons olive oil
kosher salt and ground black pepper

Directions

Season the beef with the kosher salt and black pepper. Heat the olive oil in a large skillet and brown the beef on all sides. Remove the meat to the crockpot, reserving the juices in the skillet.

Add the minced garlic, ginger and diced jalapeno to the same skillet, and sauté until the vegetables are soft. Add the curry powder and the can of diced tomatoes with its juice. Scrape up any brown bits clinging to the skillet.

Layer the onions over the beef, then pour the tomato mixture over the beef and onions. Add the beef broth and cover the pot. Cook on low for 6 to 8 hours, until the beef is very tender.

Food For Thought - If this isn't hot and spicy enough for you, add 1 tablespoon of chili garlic sauce, most often found in the Asian section of markets.

Add extra jalapenos, and a dash or two of Tabasco.

If this doesn't get your tongue's attention, nothing will!

Good To Know - The longer the curry cooks, the milder it becomes. If you really like the flavor of curry, add an extra teaspoon of curry powder when there is 1 hour left in the cooking time.

It will be a stronger flavor, but will blend well with the earlier addition.
