Beef Barley Soup Recipe
This beef barley soup recipe is another favorite soup of mine. This recipe makes a complete
meal. Just have a salad if you like and some crusty artisan baked bread.
I like cornbread with it.
Beef Barley Soup Recipe
1 lb. beef stew meat, cubed
1 Tbsp. Oil
1/2 c. chopped onion
1 clove garlic, minced
7 c. water
1 (16 oz.) can stewed tomatoes
1/2 c. pearled barley
1/2 c. cubed celery
2 c. carrots
4 beef bouillon cubes
1 tsp. crushed basil
1 c. corn
1 c. green beans
Brown the beef stew meat in vegetable oil in a large soup pot or Dutch oven. Add the onion and garlic and cook until the onion is tender and translucent. Drain the fat.
Stir in the remaining ingredients except the beans. Cover and bring to a boil. Reduce the heat and simmer 1 hour. Stir occasionally.
After one hour add the beans. Continue to cook 15 minutes or until the beef and barley are tender. You can add more water, if needed.
