Baked Beef Brisket

I like brisket but sometimes I just don't want to fire up the smoker. Baked Beef Brisket delivers its great beef flavor on those occasions.

The second brisket recipe is slow baked for tenderness.

Baked Beef Brisket Recipe

4 lb. boneless beef brisket
2 tsp. Salt
1/2 tsp. Pepper
1 clove garlic, minced
2 large onions, thickly sliced
3 Tbsp. Cornstarch

Place the beef brisket, fat side up, in a 13 x 10 inch shallow roasting pan. Sprinkle the brisket evenly with salt, pepper and garlic. Top with onion.

Bake in 350ºF oven for 1 hour, or until the onions turn brown.

Add 1 cup of hot water and cover the pan tightly with aluminum foil.

Reduce the oven temperature to 300ºF and continue cooking 2 hours or until the brisket is tender. It should have an internal temperature of around 190 degrees.

Remove the brisket and onions to a warm platter. Skim the fat from the juices or use a gravy separator.

To make the gravy, combine 1 cup water and the cornstarch. Add the slurry to the juices in the pan. Cook over medium heat, stirring constantly, until the gravy boils and thickens.

Carve the brisket across the grain into thin slices.

Serve the brisket and onions with the gravy.

Slow Baked Beef Brisket

6 lb. Brisket
Garlic powder
Celery salt
Worcestershire sauce
3 Tbsp. liquid smoke
Onion salt
Black pepper

Sauce:

1 cup catsup
1/3 cup Worcestershire sauce
2 cups water or broth from cooked meat
3 to 4 drops Tabasco

Sprinkle the thawed brisket with the liquid smoke, garlic powder, onion salt and celery salt. Cover with foil and refrigerate overnight.

The next morning sprinkle the brisket with pepper and drizzle the Worcestershire sauce over it. Cover and bake at 275 degrees for five hours.

After five hours uncover the brisket and pour the sauce over the meat. Return the brisket to the oven and bake for an additional hour. Baste with the sauce every 15 minutes.

Remove the brisket from the oven and pour off the sauce. Allow it to cool for approximately 30 minutes and then slice very thin. Drizzle some sauce over the meat and serve.

You may freeze or refrigerate Baked Beef Brisket for serving later. Reheat slowly at 200 degrees.
