Authentic Beef Stroganoff Recipe
Is this THE Authentic Beef Stroganoff Recipe? I'm not sure how authentic it is but it's the best beef stroganoff recipe I've tried.
This recipe should be made with beef tenderloin. It also makes a lot of stroganoff and it will not keep! So plan a dinner party for friends and Wow them with Authentic Beef stroganoff.
Authentic Beef Stroganoff Recipe
1 Tbsp Mustard powder
1 Tbsp Sugar
2 tsp Salt
5 Tbsp Oil
4 cups Onion; thinly sliced rings
1 lb button Mushrooms; thinly sliced
2 lbs Beef tenderloin
1 tsp Pepper
1 pint Sour cream
In a small bowl, combine the mustard with half the sugar a pinch of the salt. Add enough hot water to the mixture to make a paste. Set aside for 15 minutes.
Cut the beef tenderloin into slices about 1/4" thick against the grain, and then again into 1/4" thick strips with the grain.
Slice the onions and separate into rings. Slice the mushrooms lengthwise.
Heat half the oil in a heavy frying pan. When very hot, add the mushrooms and onions and stir in. Reduce the heat, cover and simmer, stirring from time to time for 20-30 minutes until the vegetables are tender.
Drain the vegetables and return to the pan.
In another pan heat the remaining oil. When very hot, stir fry half the beef until browned outside but still pink inside. (1-3mins).
Remove the beef from the pan and add it to the vegetables. Repeat with the remaining beef adding more oil if needed. Return the frying pan to the heat and stir in the remaining seasonings along with the mustard paste.
Stir in the sour cream, 1-2 tablespoons at a time, then add the other half of the sugar and reduce the heat to low.
Cover the pan and simmer for 2-3 minutes or until the sauce is heated through. Taste and correct the seasoning if necessary.
Serve immediately. Even though this does not keep it still is the best Authentic Beef Stroganoff recipe I've found.
